Farm Size — from 2 to 12 acres per farm (1-5 hectares)
Elevation – 1500-1800 meters
Annual Output – About 950 pounds per acre
Cultivars – 100% Arabica (Catimor with some Heirloom varieties)
Processing Method
Cherries are hand-picked ripe using selective picking. The picked coffee fruit is pulped and soaked in water for 12 hours. The coffee beans are then washed, dried, run through a huller to remove the outer shell in a process referred to as giling basah or wet hulled, and dried again until ready to be sorted and packaged.
Tasting Notes
Soft earth notes, dark chocolate, spice note, tobacco, cedar, clean finish, heavy body. Big balanced deep structured vibrant with bakers chocolate, cinnamon, white pepper, herb and floral notes.
